WHere is a simplified version of a cocktail from a new menu. Designed as a batch prepared mix that's packed with the essence of a Christmas time, making it perfect for your festive gathering. Any leftover syrup for brunch beverages, sweets, or to make more rounds of bikinis.

Makes enough for 10 people
For the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Premix (makes 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Citrus Syrup: Place the listed components in a pan, bring to a light boil, stirring so the sugar melts. Next, take off the burner and let it to reach room temperature entirely. Decant to a sealable bottle, seal keeping it in the fridge, it will last for around a month.
To make Batch Mix: Combine the specified liquids into a sizeable container, let it rest for an hour, then strain preferably using muslin, so it's completely strained.
To serve: Pour 85ml of your premix into your cocktail shaker filled with ice, and agitate gently for a minute to cool it down. Strain into an chilled martini glass or equivalent, garnish with some cranberries and finish using a light spray of the essential oil over the top.
